Swiss Water vs. sugarcane decaf: which should you buy?

The two decaf processes you’ll see most on specialty bags are Swiss Water and sugarcane (ethyl acetate). Here’s the short version.

Swiss Water: the purist’s pick

Water, time and carbon filters. No solvent touches the bean, which is why it’s the default for anyone avoiding chemicals. Expect a clean, mellow cup — great for chocolatey blends and darker roasts.

Sugarcane: the flavor chaser

Mostly from Colombia. Ethyl acetate made from fermented sugarcane strips the caffeine. Fans say it keeps more sweetness and fruit, which is why so many light-roast specialty roasters use it.

So which?

If “solvent-free” matters to you, go Swiss Water or Mountain Water. If you want the most “real coffee” tasting single origin, try a sugarcane decaf. Better yet, try both — filter the directory by process and compare.
